Has anyone looked at or installed 255/65-16" ?
It would be good to know what your use case is? Strictly on road, some light off-roading or possibly something a little more serious? Is the 255 width, super important or are you more interested in the 29" diameter, for it's increased sidewall height, when using a 16" wheel?

I'll address wheels first. the Tire rack currently shows 5, 16" wheels that fit and @Discount Tire shows none but they did show a fairly good number, at one time. I would search for 16x7, +30 to +40, in a 5x108 bolt pattern on Discount's site. They let me order one wheel for test fitting. As long as you don't mount a tire, on it, they will take it back, for a full refund, if it doesn't fit! The first of my 2, 16" wheel purchases was for a spare and was a 16x7, +38, Vision Cross, it fits. Very similar and they said it would fit, was their MB CRUX, also a 16x7, +38 and both have a 1800lbs load rating. Many 16" wheels have a lower load rating, some way less and I wouldn't consider lower, if off-roading is in your future. My 2nd 16" purchase was a now discontinued Method Bead grip 16x7, +30 wheel, it also fit and I mounted so 245/70/16 Nokian Outpost NAT's. Even with my 2" lift, these tires barley fit, which I attribute mainly to their +30 offset but somewhat to what I believe is their somewhat above average diameter, for a theoretical 29.5" diameter tire. The Method DX4, 16x7, +30 also fits.

Tires, one of the best A/T tires, is available, in a 255/65/16 and that's the Toyo Open Country AT3 but if you want to expand your search, to other 29" diameter tires, for 16" wheels, I think you will find many more 235/70/16's. With a +38 offset wheel and/or a lift you should be able to fit a 245/70/16 and with both a lift and a +38 wheel you should be able to fit a 255/70/16, a 30" tire.

An interesting tire, available in the very near future, is the BFG KO3 in both a 235/70/16 and a 245/70/16. https://www.discounttire.com/buy-wheels/mb-wheels-crux It says the 16's don't fit now but they did. Test fit before mounting tires.
