I have been wondering this also. Sometimes I have noticed when I have the blower on and the "A/C" indicator light is not lit that the air coming out the vents is definitely a lot colder and less humid that the outside air.

I don't think the spare tire has the TPMS in it. So the low PSI reading you are getting would be of the flat tire you took off. Also it takes a few miles of driving for the sensors to be read by the vehicle and updated.
