Ice cold blowing from the heater, Random over temps, coolant level fine

Hey all - tried searching the threads...but didn't find anything similar.

Yesterday I changed my PTU and rear diff fluids - no issues - and it took care of my "clunking" noise.

And then...totally unrelated, I know....
This morning on the way to work, I got an overheat alarm. Shocked, I suddenly pulled over and the temp went back down to normal. Thinking it was my thermostat sticking, I took off again, and the temp stayed fine for about 20 more miles, when it did it again. I pulled over, and it dropped back down. I repeated this 3 more times on the way to work. My heater is blowing ice cold air. Radiator fan was running constantly.
My coolant level is normal.
Belts/wheels seem to be moving correctly on the pumps/motors from what I see. Nothing looks seized or broken.
I disconnected my battery terminal thinking maybe when I had it jacked up yesterday, maybe it was uneven enough to throw a sensor off. After 30 minutes, I reconnected, and no remedy. Radiator fan has stopped running non-stop but still blowing cold. Havn't driven it more to see if the temp will still raise.

Anyone seen this?

Sounds like a stuck thermostat. The thermostat is closed when the engine is cold to promote faster warm-up. When it's closed no coolant goes through the heat exchanger (radiator). Once the coolant reaches operating temp the thermostat opens allowing coolant to go through the heat exchanger.
