The "cheap" interior is actually a selling point: I prefer no-frills, easy-to-clean surfaces that I don't have to worry about too much.
The biggest red flag thus far is having to make corrections at highway speeds over 75 mph. I suspect this will be more of an "everyday" issue for your average...
Indeed, and if this is an issue we'll see it percolate into forums and longer YouTube reviews. This isn't the type of problem that will be uncovered with driving the dealership demo around the block stuff out right now. Agreed: waiting for the serious stress tests.
Here's a "POV" YouTube review of a Big Bend with the tow package. Nice to see reviews of the lower trims, especially since many people (myself included) are still skeptical of the 1.5 L Dragon engine.
