Fridge / Drawer Setup

Hey there - new to off-roading and overlanding as the Bronco will be the first vehicle I've had that's capable of it. I've been going wherever my VW Golf can get me and looking to branch out. I'm thinking of adding an electric cooler/fridge on a slide out (driver side) with a drawer on the passenger side for the kitchen kit. This of course puts access to the spare tire pretty much impossible and leaving me with getting it hitch mounted or a custom bumper/swing-out. Wondering if anyone else is looking into this and what your thoughts are?
