Have you checked your vehicle’s CarPlay settings? A friend plugged their phone in and activated CarPlay which disabled CarPlay for my phone. I thought CarPlay had stopped working, but then I checked the setting and the toggle was just turned off for my phone.
UPDATE: I learned from my dealer that since the vehicle is technically now considered "sold" that I won't be able to track it anymore, unfortunately. Ford could really work on allowing customers to view more detailed tracking info. At least I know they're not going to sell it to anyone else...
