Regardless, it’s in the shop now for a different reason and I mentioned it to them, not that they will do anything about it because they probably won’t be able to replicate it. But I wanted it on record as happening in case others start to have a similar issue.
I constantly use adaptive cruise control and love it. I will never own another vehicle without it. ACC makes for a much easier and relaxing long distance drive.
Yes, I've had it on but not set. I had used the cancel button to disengage after cruising at 65 for some time. Before completing an S curve I look down and see it go from white to green and set itself to 70 and start to accelerate. I tapped the brake to disengage and turned it off. It's at the dealership currently. Please report it to NHTSA, they track ind investigate this stuff.

Update; after 4 days I got my BS back. Advisor said they reset the cruise control and set the predictive CC to 0. The paperwork stated they didn't do anything. After driving and carefully testing, reading owners manual, here's my conclusion; the predictive CC should more accurately be named unpredictive CC. For everything it might do, the Om states it might not do. If it's set for 5 over and I'm at that speed, then a lower speed comes along (it adjusts that at 5 over) then back to original, it may go back to the 5 over and it may not.
Also important that the "On" button will also set the speed.
In the end, I turned the predictive off, just don't need some unpredictable nonsense going on.

I am not sure how predictive speed/curve control works on these vehicles, but on my F150, even if I set it to off, it still slows me down for curves when using ACC or Bluecruise. I had to disable completely with FORScan to get rid of it.
The proper name for this feature is Predictive Speed Assist. This feature can be be disabled in the settings menu.

Yea, I know. That's what I'm saying. Even with that turned off, it still slows my truck down for curves.
