I would take the one I ordered. It only exists because I asked for it to be created. Maybe sentimental dung, but doesn't seem like there is any reason not to take the one I ordered.
To me, your last point is the best thing about the Bronco Sport. The interior to me feels pretty substantial for the size of the car. I am not small and I think it is a very comfortable drive, great headroom as well. Good cargo room. Small footprint. Just a well thought vehicle.
I think that power folding mirrors is a must on a truck (my F150's are used all the time), but I really can't think of a situation where I needed them on the Sport. Footprint of the Sport is so small and the mirrors so tiny, just never felt like they were out too much.
I wouldn't sweat it too...

I rented a Passport Trailsport oddly enough in California earlier this year. I thought it was wild that they even acquired the Trailsport trim for a rental fleet. I really enjoyed driving it for 4 days. Very fun vehicle.
